A Signature Dish for Spring and Beyond

You’re invited to this month’s Resident Cooking Class on Monday, March 19 when Chef Alex from Big City Chefs visits the main clubhouse. He has a fresh combination for the changing season, as participants will prepare risotto with locally sourced crisp asparagus, preserved Meyer lemon, smoked mascarpone and aged Parmesan. Along side that as the perfect complement you’ll make savory caramelized onion bacon jam.
Sound good? Every cooking event starts with a BYOB social hour at 6:15, then about 30 minutes later we move into the kitchen. For these recipes, Chef Alex suggests a rich citrus Sonoma Chardonnay with oak and buttery tones for pairing.
